Homemade Hot Pocket
1 whole-wheat pita pocket
1/3 cup spaghetti sauce
1/3 cup sliced mushrooms
1/4 cup cooked spinach
1/3 cup shredded low-fat mozzarella
Cooking spray
Toss the veggies with the sauce and cheese. Carefully slice the pita on one end about a quarter of the way, just enough to have an opening to fill. Hold the pita in one hand as you spoon the veggie mixture into it. Don’t over stuff! Lightly spray the outside of the pira and grill it on both sides in a skillet on medium heat for about 2 to 3 minutes on each side (or until the cheese is melted).
